Project 658 Enrolling Third Culinary Arts and Hospitality Class

Project 658 is now enrolling its third Culinary Arts and Hospitality class beginning on July 6, 2015. The 12-week class will run Monday – Thursday, 8:00 am – 2:00 pm.

“We seek career changers, students, those who desire a career in food service, someone who needs a sabbatical, anyone who is interested in a career in food service,” says PCG Member Ed Price, Project 658 Chef-Instructor.

Located on Central Avenue in Charlotte, Project 658 is a faith-based community resource offering a wide range of aid and skills programs, including medical assistance, job training, and food assistance.

The Culinary Arts and Hospitality curriculum will cover:

  • Knife Skills – fine cuts and large prep
  • Mise en Place
  • Ordering and Receiving
  • Stocks, Soups, and Sauces
  • Roasting, Sauté, Braise, and Deep Fry
  • All aspects of catering and buffet style service
  • All aspects of table service

Each student will cook, prep, clean, bus, serve as wait staff, line cook, serve off a line, deep clean, basically fill every role in a restaurant/food service environment – owner, back-of-house (BOH) and front-of-house (FOH).

Full tuition for the course is $3000.00. However, a number of scholarships are available – full and partial, regardless of economic background.

“We have never turned anyone away,” says Price. “We just want dedicated people.”
