John Schaal Board Member
John Schaal grew up in rural Wisconsin as a lover of the local culinary delights there: Cheese, beer and sausage. After moving around the country and working restaurants, and then working seriously in different restaurants as he fell in love with the industry and the craft of creating delicious food, he came to realize just how much a food or dish can tell you about a region and a people.
Between that and learning how industrialized agriculture works (or doesn’t) he have been passionate about local, sustainable, community driven food ever since.
John moved to Charlotte in 2013 with his wife Stephanie and launched his personal chef business in 2014. That was followed in 2016 with the launching of Schaal Foods Bone Broth.
Both ventures allow John to work closely with producers and creators in our Piedmont food community, one of his favorite aspects of what he does.
When not preparing meals or making broth, fermentation in its many forms keeps him busy experimenting at home and he also loves to relax with Stephanie and his dog Etta, get out of doors and hike, bike, snowboard, play soccer, and make music.
